Notes:

Our MCC was matured for 36 months on its’ leese, after which it was disgorged. The late disgorgement enhances the flavours. Strawberry and biscuit notes on the nose with yeasty undertones from the bottle fermentation and time spent on the lees. This wine shows good complexity with well-balanced palate that ends with sweet fruit and refreshing acidity.

Food suggestion:

Oysters, salmon, sushi and light, leafy salads.
